My kids love making pizza, so I came up with a recipe that uses fresh milled flour. The fresh flour gives the crust a more complex flavor than what is obtained by using store bought flour, plus all of the nutritional benefits that come with fresh flour.

This recipe makes enough dough to make one 14- inch pizza and takes under 2 hours including the rise time. The dough can also be split in half to make to smaller pizzas if preferred. My family’s favorite way of making pizza is with everything on it that they can fit, including pineapple and then smoking it on the grill. Fresh milled flour pizza dough with all fixings and smoked is the absolute best!

Ingredients
Warm Water – below 115F degrees so the yeast doesn’t get killed
Yeast – active dry yeast is my preference, but any yeast can be used
Honey– honey or another sugar is important to activating the yeast
Salt – important for gluten formation
Hard White Wheat Flour – higher protein content makes for a better crust
Coconut Oil– another oil could be used like olive oil. I prefer to use coconut oil because it is less likely to oxidize compared to other oils when it is heated.

Where to find the ingredients
I get all of my grains for milling flour from Azure Standard. Here is the yeast from Azure Standard as well. They also carry honey, though I prefer to buy my honey locally. As for coconut oil I get that from Sam’s Club or Costco as they are cheaper.
Make – Ahead
Refrigerator: This recipe can be may ahead and then kept in the fridge for up to 3 days covered. Leave space in the bowl for the dough to expand during it’s time in the fridge. Pull the dough out 30 minutes before making the pizza to allow it to warm up.
Freezer: Let the dough rise and then it can be kept in the freezer for up to 3 months. Defrost overnight in the fridge before using the dough.

How to make fresh milled flour pizza dough?
- Mill the flour
- Mix everything together
- Kneed for 5 minutes
- Cover and let rise in a warm spot for 1.5 hours or until doubled.

Pizza dough recipe with fresh milled flour
Ingredients
- 170g (3/4 C) warm water
- 226g of hard white wheat (2 cups flour)*
- 1 t salt
- 1 teaspoon honey
- 2 teaspoon yeast
- 1 Tablespoon coconut oil**
Instructions
- Mill the flour
- Mix everything together
- Knead for 5 minutes
- Let it rest covered for about an hour and a half or until doubled.
- Roll it to form your pizza and decorate.
Notes
*Weighing the grains before milling them makes it really easy to get the right amount of flour.
**Other oils can be used, coconut oil is just my preference.

Where’s the instructions for baking?
I generally make them on the grill on a pizza stone at about 500 and watch for everything to melt. You could also do so in the oven at about 450 for about 10-15 minutes.
