Quick Banana Oatmeal Bread Using Fresh Milled Flour

Not only does this quick fresh milled banana oatmeal bread use fresh milled flour, but it is also free of processed sugar making it a win all the way around. In place of processed sugar, I chose to use maple syrup to get the added benefits of the minerals with the sweetness that maple syrup provides. Since maple syrup is heated to be made in the first-place helpful enzymes are not being killed off like happens when using honey.

This is a rather quick recipe as there is no need to let it rise. Get everything mixed together and throw it in the oven. It does not get much easier or faster than that.

Of course, the key to a good banana bread is super ripe bananas as they have more sweetness to them when they are turning black compared to straight yellow bananas. Instead of throwing the overly ripe bananas out turn them into bread.

Ingredients

Hard white or red wheat – you can use either or a mix of the two. I generally decide based on which container I can reach in the pantry more easily.
Coconut oil – I have found that coconut oil keeps the bread from drying out as quickly.
Eggs
Sour milk – if you do not have sour milk on hand, it is easy to make. Add the lemon juice directly to the milk and let it sit for 15 minutes before adding it into everything else.
Lemon juice
Maple syrup
Ripe bananas – You want the banana skins to be at minimum speckled to turning black. When they are like this, they are sweeter
Baking soda
Baking powder
Nutmeg
Oatmeal

Where to find grains for milling

I get all of my grains for milling flour from Azure Standard, which is a food co-op that has drop sites throughout the United States. If there is not one near you currently, they are constantly adding new drop points and do offer shipping to home.

Quick Banana Oatmeal Bread (Fresh Milled Flour)

Not only does this recipe use 100% fresh milled flour, it also uses maple syrup as the sweetener instead of processed sugar.

Ingredients
  

  • 380 grams hard red or white wheat
  • 1/2 cup coconut oil
  • 2 eggs
  • 2 tbsp sour milk If you don't have sour milk, take fresh milk and add 3/8tsp of white vinegar to the milk to sour it.
  • 1 tsp lemon juice
  • 2/3 cup maple syrup
  • 1 1/2 cups sliced/smashed ripe bananas This is about 3 bananas.
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp ground nutmeg
  • 1/2 cup oatmeal I prefer rolled sprouted oatmeal.

Instructions
 

  • Mix everything together except the bananas and oatmeal.
  • Add in banana and oatmeal and mix again.
  • Transfer to a greased regular sized loaf pan
  • Put in the oven at 350 for 50 minutes
  • Let cool before cutting
