Quick Banana Oatmeal Bread (Fresh Milled Flour)
Not only does this recipe use 100% fresh milled flour, it also uses maple syrup as the sweetener instead of processed sugar.

- 380 grams hard red or white wheat
- 1/2 cup coconut oil
- 2 eggs
- 2 tbsp sour milk If you don't have sour milk, take fresh milk and add 3/8tsp of white vinegar to the milk to sour it.
- 1 tsp lemon juice
- 2/3 cup maple syrup
- 1 1/2 cups sliced/smashed ripe bananas This is about 3 bananas.
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp ground nutmeg
- 1/2 cup oatmeal I prefer rolled sprouted oatmeal.
Mix everything together except the bananas and oatmeal.
Add in banana and oatmeal and mix again.
Transfer to a greased regular sized loaf pan
Put in the oven at 350 for 50 minutes
Let cool before cutting
